Ever wanted to take an in-depth class about wine? Welcome to the Hawk Ridge Wine Academy! We are excited to offer you wine lovers two in depth classes on the art and science of winemaking. It doesn't matter if you are new to enjoying wine or a seasoned connoisseur, these classes will offer an interesting new approach to your wine appreciation skills.

The classes may be purchased separately or together for a 10% savings!! See the buttons below to select your preferred class or the option for both.

Wine 101 (4/25/2024): Head Winemaker Maureen Macdonald explains the deductive tasting method and how to identify quality markers in a wine. An interactive class to learn how to accurately identify major wine characters. Taste some delicious Hawk Ridge wines and learn how to identify a wine based on appearance, taste, and aroma. You will learn specifically how acids and tannins affect wine and how a balance of these factors is a critical indicator of a quality wine. Each guest will receive 4 2oz. samples of wine along with other beverages to taste to demonstrate educational points.

Wine 201 (5/16/2024): Blend your own bottle! In this class you will have three red wines to work with, blending different samples until you arrive at a favorite blend. A staff winemaker will help you blend your own bottle to take home and enjoy! Each guest will receive wine for trial blending and sampling and then blend and take home a 750ml bottle of their own personalized blend. You get to be a winemaker for an evening, but without all the cleanup!

These classes will be held in the winemaking room, where it tends to be cooler (60F). For your own safety, please wear closed-toed shoes in case of a broken glass.

Please join us on Wednesday, April 24, from 6-8pm for a creative and educational experience with Lauren Dassatti of Sweet Pea Florist of Watertown CT. Lauren has almost three decades of floral experience, starting her first floral shop job in high school and has been in the floral industry ever since. She opened her floral shop here in Watertown, 22 years ago and has expanded her entrepreneurship to a gift boutique, Serendipity, as well.

In this class, Lauren will walk you through the planting, arranging and care for your own succulent garden. If you don't have a green thumb, do not worry! These plants are hardy and easy to maintain.

In the class you will receive:

• a white, square container for the arrangement

• potting mediums

• 5, 2" succulent plants

• an assortment of whimsical decorations to adorn you garden and make it your own!

This class will be held in our Hawk's Nest loft, which is not handicapped accessible.

Pizza Party days in elementary school were always the best days, am I right? Hawk Ridge Winery has decided to throw a good ole' fashioned Pizza Party! Our chef, King Richie, has created some delicious new pizza creations and we have paired them up with some Hawk Ridge classic wines for a fun and tasty evening! Come on down and savor the flavors of yummy pizzas and wine. Our winemaker, Maureen, will also be on hand to speak about the pairings and answer any questions that you may have regarding our wines.

Each ticket will include 4 samples of pizza matched with a 2oz. pour of Hawk Ridge wine. (No substitutions)

Lindsay, or Let’s Get Figgy With It, will lead you through the process of how to create a themed charcuterie box. You will learn how to create your own masterpiece and then bring it home to share with others! Chef Avery opened her own gourmet pastry company after graduating from Johnson and Wales University with a degree in Baking and Pastry Arts and Food Service Management. She is an award winning pastry chef and her website will show you some of her incredible creations. She can make custom order cakes and cheesecakes as well as some truly unique dessert displays. Scenes from an Italian Winery! River of Dreams is coming back for an Encore!

River of Dreams is a 6 person Billy Joel tribute band that is 'approved' by Billy Joel himself!

This is a ticketed event and the doors will open at 6:00 pm which will allow time for drinks and food to be ordered before the music starts at 7:00 pm!

The show will run 2.5 hours (until 9:30 pm) and the band will take two short breaks during the performance.

Melt & Pour Soap Making Class - Make your own soap on Friday, January 26th!

Clean yourself up! We are offering a special soap making experience for those who wish to try soap making and want to start with the basics and avoid chemicals involved with cold process soaping.

Skip the trip to Michael's and come straight to us where we have everything you need including the instructions on how to do it yourself. Not only will you be taking home the knowledge and know how, you'll be taking home your very own soaps you made!

We provide body safe additives like colors, fragrance oils, botanicals and more! You have full creative freedom with your design choices. We do a quick demo of how to make the soaps and then you and your friends begin the process on your own with our guidance if you so desire.

This is a melt and pour "how to" class that includes the demonstration and explanation of the process as well as a do it yourself portion that includes the necessary equipment and ingredients. We have all the items pre measured and easily accessible for a class (like setting as well as instructions on how to do it).

Attendees will leave with their own custom soap (about 1/2 a pound of melt and pour soap) and can infuse it with whatever they prefer out of the materials we bring.

Each team will have 90 minutes to build. After the time is up, Hawk Ridge Staff will vote on their favorites based on creativity, design, originality, holiday spirit, and use of materials. Feel free to build based on a theme! For example, we've seen items with sports themes, movie themes, popular culture themes, etc. Having a plan before coming in is a good idea *hint hint*

You may bring in additional decorating items but everything on the final project MUST be edible! You will be given a 12 inch round base to build upon.

Chef Lane Simmons is back by popular demand to teach and explain how to cook up your traditional Holiday Meats with a "Smokin Lane's twist".

He will be showcasing two meat selections being a Smoked Apple Brined Turkey and a fantastic Prime Rib!

He will be teaching registrants his techniques with how he prepares his Bone-in Prime Rib Roast featuring one of our classic red wines. In addition, he will be breaking down the art of brining as he will showcase his Applewood Brined Smoked Turkey with tips on how to prepare for this holiday season.

Attendees will also be creating their own seasoning rub to take home!

Lastly, guests will sample both meats and Lane will conclude with a raffle for one participant to win a Turkey Brining Kit (includes small turkey, brine, and seasoning).

A glass of wine, beer, or slushie is included with each ticket! If you would like to sit with someone who bought a ticket separately, please email hrwjeff@gmail.com to let him know.
